At Il Gallo d'Oro it's a la carte all the way with a first-class fusion of Italian and Mediterranean – just remember to dress for the occasion, which means a jacket and tie for the gents. And if you like your dinner served with a side-order of sea views, the Blue Lagoon Restaurant is ideal. As for drinks, the Cliff Bar and Bistro and Valentino's do a mean line in shaken-and-stirred cocktails, and the Cactus Bar serves a selection of fruit juices.

As with most hotels in Madeira, the grounds here step fresh down the hillside, so the little extras seem to be squirreled away. First up there's a heated indoor-come-outdoor pool on the top tier of sun terrace. From here you can take the lift right down to a salt-water lagoon pool at the bottom - this is where you'll find the scuba centre, too. But the real talking point is the famous Cliff Bay Spa. Designed by British Architect, James Ward, this health spa combines treatment rooms, garden gazebos and E'SPA products to raise the bar on relaxation.
